This weekend was such a whirlwind of events…weddings, auctions, baby showers, and bridal shows, but with the help of my family I SURVIVED! I actually have lots of things to blog about and am so happy I finally have spare minute to blog! I absolutely love when clients want to order a custom cake with all the details and so when I got the chance to make this cake for a precious girl turning one I couldn’t wait. The cake was a lot of work…well, more like the crown was A LOT of work, but afterwards is was definitely worth it!
Here is the step-by-step process of the cake! First I covered the three tiers in white, light pink, and deep pink. Then I used an impression mat to make the dot imprint and cross-hatch imprint. You just push the mat onto the fondant while it is still soft and then continue to follow the pattern around the cake.
I then used my pearl maker to make pearls to go around each cake layer.
Next I added a ribbon band and made two different bows for the tiers.
I used royal icing to pipe little hearts on the cross-hatch pattern and then painted them with silver luster dust.
I then added the bands and bows to the tiers and sprayed the whole cake with pearl luster dust.
Lastly I added my hand-made crown…which was very tedious by the way! I had many problems with it not drying and collapsing, but finally (with my prayers) it stayed up!
A few weeks back I also got the great opportunity to make cookies for Mattel! They were having a creative meeting for the upcoming 50th anniversary of Barbie and had me make cookies with their printed images on them and some cupcakes to go along with it. I had a blast making them and seeing all of their great ideas!

Well, let me see if I can come up with a word to match that cake….stunning, no……spectacular….no…..incredible…..no, lovely…..no……..regal….well, yes, perhaps…..but truly..it is by far and away my favorite of yours so far! I made my first topsy turvy as per your tute here online. I only did it as a mock up, and I used only what I had on hand. So I didn’t get to do anything elaborate, and only did two tiers, but I wanted to learn the technique. What a fun time I had! I can’t wait to do many more! Your blog is truly a learning tool for me and my cake business, which has really taken off here lately!

How do you stack the cakes–lift them into position–without damaging the frosting, or fondant, on the cake you’re lifting or the cake you’re placing the tiers onto?

On my way out I clicked on your most recent blog just to see what it’s all about, and WOW! That cake is BEAUTIFUL! Just gorgeous. And how cool that you showed it all step by step; but I know most of us will just appreciate your hard work and not try to do all that ourselves, being better at drinking martinis than decorating perfect, luscious-looking masterpieces. Baking and decorating are true arts, and they are time-consuming and exhausting, and very few people can do it as well as you are. A toast to you!

JapanGirl- I really don’t ship too much right now. Sometimes I ship my sugar cookies, but that is it! Wish there was a better method!
Ashley Ray – I think the pearl maker is the 1/4″ one, but I use all sizes…just depends on the design of the cake

Gretchen – I share almost all my recipes and techniques, but the sugar cookie recipe is one thing that I can’t give out since it is a huge part of my business…it is a lot like the Martha Stewart one though, so I would definitely recommend trying hers!
Linda – When transporting cakes I usually use a offset spatula to help lift and place the cake. For fondant cakes you can use your hands more since the frosting won’t be messed up and with buttercream cakes I refrigerate them first to set the icing and then use a knife to run along the base of the tier to release the frosting and then place it on the tier with the offset spatula. Hope that helps!
