Well, as you know my sister and I are trying to learn how to make all sorts of sugar flowers. We have become quite obsessed with them and my credit card bill definitely proves it! I have only actually taken one class from Ron Ben-Israel on how to make sweet pea sugar flowers and the rest we have learned through books and watching videos from Nicholas Lodge. Sugar flowers are very tedious and require a lot of patience (and tools), but they are also one of the more artistic aspects of cake decorating. The cake was buttermilk cake with white chocolate mousse buttercream and fresh strawberries…yummy! We made it for a recent bridal shower and were very excited to put our sugar flower knowledge to the test and create a gorgeous cake for the bride-to-be!
We had such a great time making these peonies, berries, parrot tulips, and butterflies! Definitely let me know which one you liked the best!

Wow – I just took a class to learn the basic gumpaste rose – these don’t look like they can possibly be made of sugar – Amazing as usual. I like the pink ones the best!

It would be impossible to pick out a favorite flower, as they are all exquisite! The peonies, being my favorite flower anyway, I suppose would be the one I would most want to duplicate. That sure looks like fondant on the cakes. I am not familiar with chocolate mousse buttercream. You do make my mouth water…..gorgeous cake, and I know the bride was thrilled beyond words.
Is your sister new to cake dec? You mention the two of you collaborating a lot together lately. You are a dynamic duo…for sure!

I do believe this is the most beautiful cake you’ve made! The flowers are amazing. You guys did an incredible job on them.
Question….you said the frosting was a white chocolate mousse buttercream….how did you get the consistency you needed without over sweetening it? It seems in order to get a firmer frosting you have to add a bunch of powdered suagr. White chocolate is sweet as it is and mousse isn’t very sturdy. Did you use shortening or butter? Perhaps you added gelatin? Or was the frosting layer very thin? Okay that might have been more than one, Thx!

Spectacular! the sugar flowers look so real and i love the colors. the cake is so adorable and i love the details. the butterflies look so enchanting on this cake. your studying and practicing really paid off. the flowers look just as good as Ron Ben-Israel, and you know he is one of the greatest. the colors really pop off the white, so pretty! i also love the berries. Question: The fondant on the cake seems to be “glittery” for want of a better word, do you brush it with something after applying it to get that effect? or is it the particular brand you used?
