Halloween Photos: Part II

I hope all of you had a Happy Halloween!  I had way too many cute photos of my family that I thought I had to share them with you!  Plus I got the chance to make a fun 3D Pumpkin cake for a client of mine.  Her daughter was turning 4 years old and she wanted a fun cake that pulled in both occasions!

The cake was quite yummy inside!  The bottom tier was chocolate cake with whipped cream, strawberries & chocolate ganache. The middle tier was pumpkin cake with cinnamon cream cheese frosting & salted caramel. And lastly the top tier was banana cake with chocolate ganache and peanut butter cream cheese frosting.  

I hand sculpted each pumpkin and then airbrushed them to make them look more realistic.  Next I stacked them and created lots of vines and stems to fill in the gaps.  Here are some more close-ups of the cake…unfortunately I didn’t realize they weren’t in perfect focus under I was done with the cake, but at least they show you more details.

Aren’t they too cute for words!  Well, those aren’t the only Halloween photos I have for you…I just had to include these next few photos.  All I have to say is “How awesome is my staff!!!”  Now sadly, I had a wedding delivery that day and couldn’t dress up or else I would’ve strapped the pirate belt on and jumped in the photo!

Trick or Treat! It’s Halloween Time!

We just started featuring some new fall treats as well!  The Pumpkin Cupcake with Cinnamon Cream Cheese Frosting and Salted Caramel is to-die-for it I do say so myself!  Way too tempting for me to look at everyday!

Halloween Cupcakes: Ghosts & Witches Hats

So sorry for the long delay in posts!  Life has been crazy with lots of ups and downs.  Sadly my class in Florida with Colette Peters got cancelled 5 days before I was suppose to fly out…don’t ask me how something like that can happen!  So since we had already planned on a vacation we decided to at least go to San Francisco for a couple days.  We ended up having a great time and I have LOTS of photos to come. Before I show all the travel pictures I wanted to share with you my last tutorial for Halloween cupcakes.  So onto the cupcakes!

To make these little ghosts you just need a little white fondant.  Roll the fondant out and cut it with a circle cookie cutter (the size depends on what size you want your ghosts).  Then place the fondant on top of two stacked cotton balls.  Let the fondant dry for about 30 minutes and then check to see if it has hardened.

Then use an edible marker to draw on the black eyes.  Place the little ghost on top of your cupcake and you’re done!

Now to make a different kind of ghost for your cupcake…you need to form the fondant into a ghost like shape.  Then use a balling tool or something with a rounded end and push it into the fondant to make the two eyes and mouth.  Next gently pull out the sides to make the ghost’s hands/arms.  Lastly use a toothpick to make indents on the sides of the ghost to give it some definition.

Now just place your ghost on your cupcake and you have one haunted dessert!

If you don’t want a ghost on your cupcake you can change it up a little and make a witches hat.  To make the hat you need to roll out some black fondant and use a witches hat cookie cutter to cut out the shape.

Then roll out your choice of colored fondant and cut them into strips to add some color to the hat.  Adhere the strips with a dab of water.  Next brush the whole figure with luster dust to give it a shimmer.  Finally pipe on a couple dots of either royal icing or ganache and attach silver dragees.

Halloween Cupcakes & the Cookbook Winner

Well, today I put in a lot of time trying out some new decorated cupcakes for Halloween, so get ready for lots of posts about Halloween/Fall cupcakes!  I know most of my readers like tutorials, so I took the extra time to document the creations step-by-step…hope you like them!  Before I go into the cupcakes though I want to announce the winner of The Perfect Scoop…it’s #11 DanaD!!! Congratulations Dana…just email me your contact information and I will ship the book off to you.  Now onto the cupcakes!  This first posting is going to be all about pumpkins and Fall leaves.  

These pumpkins are quite easy to make and can be decorated any way you like them.  You can leave them all one color (which would be the easiest route) or you can choose to make a multi color pumpkin like I did. Here are some photos of the process…

First you mix some fondant colors together…I choose two different color oranges, white, and sage green. To get the swirls you have to fold the fondant over itself and then stretch/roll it out.  Continue doing the fold over and stretching method until you get the look you want. Then roll the fondant into one or two balls (depending on the pumpkin you want).

Then using a toothpick make a hole in the top and make ridges on the side of the pumpkin.

Next, using a little brown fondant or modeling chocolate make the bark/stem and use the toothpick to make grooves into it to give it a realistic look.

Use a little green fondant to make the vines and then stack the pumpkins if you are doing a double decker. Brush on luster dust on the pumpkin if you have it to give it a shimmery look. 

Now onto the Fall leaf cupcake!  


This leaf was made with modeling chocolate, which is basically corn syrup and chocolate melted together and formed into a paste/dough.  It tastes sort of like a tootsie roll (not quite as good) and is very easy to work with.  It holds its shape pretty well and is easy to mold into figures.  So here is how you do it…

First you roll out the modeling chocolate to whatever size you want it…mine is about 1/8″ thick.  Then use a silicone impression to imprint the look of a real leaf onto the modeling chocolate.

Next, cut out the leaf shape with an x-acto knife and brush it with luster dust to give it a copper shine.


Definitely try these out, they are a lot of fun!  If you don’t have modeling chocolate you can use fondant or marzipan and they will work great too!

Get ready for some more Halloween cupcakes this week…watch out because they might get a little scary!
